-1.5 oz Conifère de Wabasso gin*
-3/4 oz Les Charlatans Sea Buckthorn Syrup
-3/4 oz freshly squeezed lime juice
-Fresh thyme sprigs
*The boreal notes add a nice complexity to the mix of flavours.
-Pour all ingredients into a shaker (including a sprig of thyme) except for the sparkling water.
-Shake for about 15 seconds with ice.
-Pour into a balloon glass and strain through a sieve.
-Add sparkling water to desired strength and ice.
-Garnish with a slice of lime & a sprig of thyme.
